What makes broccoli so healthy?

Broccoli is a very healthy food. Meanwhile, more and more media report about it. This cabbage belongs to the family of cruciferous vegetables, which includes broccoli, cauliflower, red cabbage, cabbage, kohlrabi, cress, radish, radish and horseradish. But what makes these cabbages - and broccoli in particular - so healthy? Crucial are its secondary plant substances, especially the yellow plant dye quercetin and glucoraphanin. The glucoraphanin is converted after consumption by the enzyme myrosinase, which is also present in the broccoli, into the highly effective sulforaphane belonging to the mustard oil glycosides. This creates the typical cabbage smell and taste. In the gut intestinal bacteria continue this transformation process. Particularly rich glucoraphanin is found in broccoli seeds of the species Brassica oleracea italica.

Who wants to profit from the valuable ingredients of broccoli, so especially the glucoraphanin optimal, should therefore use an extract that also contains the enzyme myrosinase at the same time. Broccoli Extract + Active Enzyme Wolz contains both substances obtained from broccoli seeds by a patented and very gentle process. Through this manufacturing process, where the temperatures are always below 40 ° Celsius, an active combination concentrate is obtained, in which the valuable secondary plant compound glucoraphanin can be converted by the enzyme myrosinase in the intestine into the active substance sulforaphane and thus used by the body.

Who eats broccoli, usually takes only little sulforaphane

Anyone who believes that they are doing something good with plenty of broccoli juice will be a little disappointed. Because with most newer breeds, unfortunately, not much Glucoraphanin is included. The valuable ingredients in broccoli are also destroyed by storage, by deep-freezing and above all by cooking. The reason: the enzyme myrosinase, which indeed converts the glucoraphanin into the active ingredient sulforaphane, is particularly sensitive; it is already destroyed at 40 degrees Celsius. For this reason, you would actually need to consume raw broccoli right after the harvest in order to absorb a sufficient proportion of the valuable ingredients. The Quercetingehalt also significantly reduced by storage and processing. Cooking destroys most of the quercetin.

High bioavailability

Glucoraphanin is converted into the in-body active substance sulforaphane only by the enzyme myrosinase, which occurs in the broccoli, and our intestinal bacteria. Why not simply win sulforaphane and offer it in capsule form? Some suppliers do this and sell dried sulforaphane. The problem: Sulforaphane extract is not very stable as a rule. It is better for the effect - as with broccoli extract + active enzyme Dr. med. Wolz - Glucoraphanin with the enzyme myrosinase to combine. After consumption, one part is then rapidly split into the active ingredient sulforaphane and another part is slowed down by the intestinal bacteria. So the Sulforaphane is made freshly available to the body. These two processes result in an extended drug level. Since glucoraphanin and myrosinase are acid-sensitive, administration in a gastric acid-resistant capsule is necessary.
